Relevant provisions: Recommended international code of practice concerning hygiene in the processing of frogs' legs CAC/RCP 30-1983. There are no international recommendations for snails. The general principles of food hygiene in Annex III of the Codex Alimentarius Alinorm 95/13 apply.
